INGREDIENTS 

1 eggplant 

2 tablespoons of tahini 

3 tablespoons of Greek yoghurt 

2 garlic cloves (pressed) 

Juice of 1 organic lemon 

Salt to taste 

TO SERVE 

Extra-virgin olive oil 

1 handful of pomegranate seeds 

METHOD 

Roast the eggplant over an open flame, gas burner or grill, turning occasionally, for about 20 minutes. Alternatively, you may roast the eggplant for about 40 minutes in an oven pre-heated to 250°C (480°F). Set aside and cool. 

After the eggplant is cool enough to handle, scrape the flesh of the eggplant out of its skin and mash it with a fork or purée it in a food processor. Add the tahini, yoghurt, garlic and lemon juice to the mashed eggplant and blend. Salt to taste. Spoon the dip into a bowl and drizzle with some extra-virgin olive oil. Garnish with pomegranate seeds. 

Moutabal is usually served cold, as part of a mezze spread. For more pronounced flavour of moutabal, try serving it warm.
