INGREDIENTS (makes 1)
3 free-range eggs
2 tbs natural Greek yoghurt
Pinch of salt and pepper
filling ingredients (as pictured)
zucchini, spiralised
cherry tomatoes
chicken breast, poached
avocado
Other recommended filling ingredients
Option 2
smoked salmon
goats cheese
rocket (or favourite leafy green)
fresh dill
Option 3
Broccolini
baby spinach
goats cheese
toasted pepitas/almonds
avocado
METHOD
Whisk the eggs, natural Greek yoghurt, salt and pepper into a bowl until light and fluffy. Pour into a heated non-stick frypan and spread out to the edges. Fry until cooked through then flip to seal the other side. Remove from heat and set aside. Add in the desired filling, fold omelette over and serve.
METHOD (as pictured)
Lightly fry the cherry tomatoes and zucchini noodles and set aside. Lay the omelette flat on a plate. On one side, place the chicken, avocado, zucchini and tomatoes. Fold over the side with no filling and garnish with microgreens.
