In this busy society that we live in, breakfast can often be a forgotten or rushed meal. At A Conscious Collection we are big advocates of eating mindfully at each and every meal. Eating mindfully means taking the time to sit down and enjoy each mouthful of food, being careful not to rush through your meal. This promotes good digestion and absorption of nutrients. When mornings are busy, in order to find this time to eat mindfully, the meal needs to be quick to assemble. That is where this seedy granola comes into play.

We recommend spending 20 minutes on your Sunday, making a batch of granola so that it is ready to go for those busy mornings throughout the week, Serve with a side of coconut yoghurt and your fruit of choice or use as a smoothie bowl or porridge topper. This high protein granola is the perfect addition to your breakfast rotation.

Prep time: 5 minutes
Cooking time: 15 minutes

Ingredients
2 cups buckwheat groats
1/2 cup pepitas
1/2 cup sunflower seeds
1/2 cup shredded coconut
1/2 cup sesame seeds
1/4 cup linseeds
2 tbsp maple syrup
3 tsp vanilla essence
1/2 cup extra virgin cold pressed coconut oil

Method
Preheat oven to 180 degrees Celsius.
Add all dry ingredients to a medium-sized bowl.
In a small saucepan add coconut oil, maple syrup and vanilla essence. Bring to a low heat and stir until coconut oil is melted.
Pour coconut oil mixture over dry mixture and stir to combine. Once granola mix is evenly coated, transfer to two baking trays, spreading out evenly.
Place trays in oven for 15 minutes.
After 15 minutes, remove from the oven and allow to cool completely before spooning into an airtight jar for storage.
