Summer salads are made easy thanks to a few simple ingredients and a delicious variety of our favourite sweet, bite sized tomatoes. The very high flesh to juice ratio in these varieties, not only intensifies the flavour but also makes Perino™ tomatoes practically ‘squirt free’ and the perfect ingredient for a light, fresh and nourishing salad. Look to your local Coles to pick up some punnets of the Blush Tomato variety and whip up this summer salad in less than 15 minutes. The whole family will love it.
¼ cup olive oil
1 tbs lemon juice
1 tbs lemon rind
1 tbs honey / rice malt syrup
Pinch of salt
Pinch of Pepper
1 punnet of Blush Perino Sweet Snacking Tomatoes
1 punnet of Blush Perino Gold™ Sweet Snacking Tomatoes
1 packet of Blush Amoroso Cocktail Truss Tomatoes
2 tbs chopped fresh basil
1 tbs fresh chives
200 grams fresh ricotta cheese.
Twigs of thyme for garnish
Preheat the oven to 150 degrees Celsius.
Place Blush Amoroso Cocktail Truss Tomatoes on a baking tray, spray with extra virgin olive oil and bake for 10-15 minutes until tomatoes are soft and roasted.
Cut half of the punnet tomatoes in half and leave the rest whole. Place in a large mixing bowl. Add in cooked Truss Tomatoes.
To make the dressing, combine the olive oil, lemon juice, lemon rind, honey/rice malt syrup, chives, salt and pepper in a mixing jug and whisk with a fork.
Pour dressing over tomatoes, mix well. Spread out on a clean plate for presenting. Add wedges of cottage cheese, extra basil and twigs of thyme for decoration.
