We’re all for a little indulging here and there, but if you feel like you’re jumping from party to party, never underestimate the power of a nourishing bowl of goodness to set you back into healthy habits. This dressing packs a flavour punch, with a base of nutty hemp seed oil paired with health boosting raw garlic, dill and lemon, this nutritious salad will have you feeling
instantaneously virtuous.
Ingredients
4 cups kale leaves, torn
½ lemon, juiced
2 teaspoons extra virgin olive oil
2 cucumbers, chopped
1 radish, chopped
2 tablespoons hemp seeds
2 tablespoons macadamias, toasted
2 tablespoons dill, fresh
Hemp and Dill Dressing
2 tbsp hemp seed oil
3 tbsp dill, fresh, finely chopped
1 clove garlic, minced
½ lemon, zested and juiced
Sea salt and pepper, to taste
Method
1. Make the dressing by shaking all ingredients in a jar. Alternatively, blend in a small
blender if you prefer it smooth.
2. Using your hands, massage the kale in lemon juice, olive oil and salt until wilted and
reduced in size. Place into 2 bowls with the cucumber and radish. Top with hemp seeds,
macadamias and fresh dill and drizzle over dressing to serve.
