Nothing Screams love more than rich, decadent, melt in your mouth chocolate pudding – so with mothers day coming up it seems only fitting I share one of my most favorite go-to desserts.The Chocolate Protein Pudding which is gluten free, refined sugar free, dairy free, rich in protein and damn right delicious.
These protein puddingss are so simple to make, they take very little time and effort and are quite impressive to whip up as a dessert for just about any occasion. I find them great as a post workout meal, breakfast or mid afternoon pick me up as they are nourishing, healing, full of fibre and protein to keep you fuller and satisfied for longer. I have demonstrated in the photos that you can serve these two ways. You can eat it straight out of the mug, ramekin (you choose) and pour your chocolate on top, or present it on a saucer or bowl, giving you extra room to add more nourishing ingredients – think; Coconut yoghurt, berries, mixed nuts, clean ice cream, pure maple syrup, the possibilities are endless!
Ingredients
3 tbs almond meal
1 tbs chocolate protein powder
1 and 1/2 tbs cacao
1 tbs almond milk
1 large organic free range egg
1/2 tsp double acting baking powder
1/4 tsp vanilla essence.
1 tsp stevia. (or to your taste)
Method
Mix all pudding ingredients together in your cup or ramekin until a cake like batter is formed.
Place in microwave and cook on high for 1 minute and 15 seconds.
Chocolate sauce ingredients
½ cup coconut oil
¼ cup cacao butter (can omit just replace with more coconut oil)
¼ cup cacao
2 sachets stevia
1 tbs maple syrup
3 tbs almond butter
dash of coconut milk or almond milk.
Method
Mix all the chocolate ingredients on the stove in a very low heat until well combined.
Serve hot over your protein puddings.
