Meet Elyse Knowles, the down-to-earth, Aussie bombshell with the world waiting graciously at her fingertips. With an infectious smile and svelte golden limbs, this genetically blessed beauty is quickly becoming an admired household name as one of Australia’s most popular models. Elyse has modelled for some of the world’s most iconic brands, her impressive and acclaimed portfolio including big-names like Guess, Myer, Bras N Things, Model Co and Billabong.
As the face of Ultra 3 Cosmetics and, most recently, Melbourne Spring Racing Carnival, Knowles (aka Knowlzy) says her success in the industry is the result of hard work, persistence and determination. “If you really want something you can get it,” she says. “When you get knocked down, come back 10 times stronger, believe in yourself and anything is possible.”
“If you really want something you can get it, When you get knocked down, come back 10 times stronger, believe in yourself and anything is possible.”
Elyse is no stranger to the industry. She started modeling at the tender age of 10 and credits her mum with encouraging her to follow her dreams. “She spent eight years driving me to countless jobs and castings,” Elyse says. Fast forward 14 years and Elyse, 24, boasts more than half a million followers on Instagram, owns her own fashion label Evrryday (with a percentage of profits going to WaterAid) and is one of the most sought after models for campaigns and ambassador roles near and far.
Not shy of sporting a pair of cons and a backwards cap over her quintessential wardrobe, this girl is a true reflection of hard work, positive body image and true #positivevibesonly mentality. Yep, did I mention we love her?! #girlcrush.
I recently caught up with the blonde beauty to chat all things health as we made her favourite healthy treat; lemon Slice.
MY DAY ON A PLATE

Upon Rising
Every morning without fail I come home from exercising to a mug of hot water with apple cider vinegar or hot water with lemon to kickstart my digestion.
Breakfast
Brekkie is usually a superfood smoothie bowl with some protein powder, nuts, seeds, grains and berries.
Lunch
Everyday is different. Work has a big impact on what I eat as usually lunch is provided (which can be good…. or BAD). I always try to avoid rice, bread and anything that is sweet. I really enjoy a salad full of goodness!
Dinner
Dinner is always a mix of lean protein, such as fish or chicken accompanied by some fresh vegetables. My favourite meal is grilled salmon with lemon alongside a salad of spinach, beetroot, grilled pumpkin, cooked almonds, goats cheese, chickpeas, lentils and quinoa with a lemon juice and seeded mustard dressing.
Snacks
When the sugar cravings kick in I opt for a homemade protein ball or two, full of nuts, seeds, dates and other wholefood ingredients . I always have a raw slice ready to have on hand to stop me snacking on processed foods. My favourite at the moment is this Lemon Coconut Slice. Yum!
